Past Festival Pudding Winners

If you’ve never had persimmon pudding, then you must not be from around here!

In the Fall, this delicacy sits on the table of every family gathering in the area. Each pudding is as unique as the person that makes it!

That’s why the Persimmon Festival hosts a pudding contest every year! When it comes to cinnamon vs. allspice or heavy cream vs. milk, it all makes a difference.

INGREDIENTS:

2 CUPS PERSIMMON PULP
2 CUPS SUGAR
3 EGGS
1 1/2 CUPS BUTTERMILK
1 TSP. BAKING SODA
1/4 CUP CREAM, HALF & HALF
1/2 STICK MELTED MARGARINE OR BUTTER
1/4 TSP. VANILLA
1 1/2 CUPS FLOUR
1 TSP. BAKING POWDER
1/4 TSP. SALT
1/4 TSP. CINNAMON

DIRECTIONS:

  1. Combine pulp, eggs, & sugar in a bowl.
  2. In a separate bowl, combine buttermilk & soda, mix until it foams up a little.
  3. Add buttermilk & soda mixture to pulp mixture.
  4. Sift dry ingredients & add alternately with the milk.
  5. Add butter & vanilla.
  6. Coat a 9×13 inch baking dish or two 8×8 inch dishes with butter or margarine (melt the 1/2 stick butter or margarine in baking dish & then pour in the batter).
  7. Bake at 350 for 45 minutes to 1 hour.

Pumpkin Spice Caramels

INGREDIENTS:

1 STICK BUTTER
1 1/2 CUPS SUGAR
1/2 TSP. GROUND CINNAMON
1/2 TSP. GROUND GINGER
1/4 TSP. GROUND ALLSPICE
1 CUP LIGHT CORN SYRUP
14 OZ. CAN SWEETENED CONDENSED MILK
3/4 CUP PERSIMMON PULP

DIRECTIONS:

  1. Prepare a 9-inch square pan by lightly buttering it or lining it with parchment paper.
  2. In heavy 2 to 3-quart saucepan, melt butter over medium heat. Add sugar and spices: thoroughly blend
  3. Add corn syrup, sweetened condensed milk, and persimmon pulp – stirring well after each addition.
  4. Continue to cook over medium heat, stirring frequently to prevent scorching, until the temperature of the mixture reaches 240* F (soft ball stage)
  5. Remove from heat and pour mixture evenly into the prepared pan
  6. When cool, turn candy out of pan and cut into 3/4 inch squares. Wrap individual pieces in 2 3/4 to 3-inch squares of waxed paper. Store in airtight container.
